The joy and comfort of the scone was discovered by Sunberry Heights Baking Company founder, Corbit Larson, on the wind-swept isle of Aran off the coast of Ireland many moons ago. ‘Twas a gray, damp, windy afternoon when the jaunty cart delivered Corbit and his lovely bride Barbara back to the village after a trek up to the old fort which overlooks the sea. The local pub was chock full of hard working townsfolk (“I’ll have another pint, Liam”), well, at least Liam was working; so the yanks found comfort in the teahouse across the street. It was there that Corbit was introduced to the magical scone.
And he’s been looking for another, ever since.
At every opportunity he purchased and sampled anything labeled ‘Scone’ back in the States. But he was never satisfied; he never re-discovered the magic. “Too dry”, “Too mealy”, “It’s just a big cookie”, “Not enough fruit”, “No flavor”, “It’s merely a muffin-top”…never satisfied.
Corbit determined that if he was ever to enjoy a scone again that he was going to have to create it. He searched around for a basic scone recipe and spent months tweaking and adjusting and experimenting until he came up with a scone he was proud to call his own. Thus, Captain Corb’s Sunberry Heights Baking Company came to be.
